Jamaican Jerk Chicken |
Ingredients :
- 1 whole chicken,
- Chili peppers, chopped
- 4 cloves garlic, chopped ( or 2 tbsp minced garlic)
- 1 tablespoon dried thyme
- 1 tablespoon ground allspice
- 2 onions, chopped
- 1 tablespoon light brown sugar
- ½ tablespoon nutmeg
- ½ tablespoon ginger
- 1 tablespoon olive oil
- 1 lime, juiced
- 100 mL (⅓ cup) apple cider vinegar
- salt, to taste, we used 1 tablespoon
- pepper, to taste, we used 2 tablespoons
- Prepare the chicken by removing the backbone using a pair of kitchen scissors or a sharp knife. Turn it over and flatten it down to spread the chicken out as much as possible.
- Blend together all of the other ingredients in a food processor and spread it over the chicken as much as possible.
- Cover and marinate in the fridge for at least 3 hours or overnight.
- Bake in the center of a preheated oven, uncovered for 45-50 minutes at 400°F (200°C), or until the thickest part of the thigh is 320°F (160°C).
