Jamaican Jerk Chicken Ingredients : 1 whole chicken, Chili peppers, chopped 4 cloves garlic, chopped ( or 2 tbsp minced garlic) 1 tablespoon dried thyme 1 tablespoon ground allspice 2 onions, chopped 1 tablespoon light brown sugar ½ tablespoon nutmeg ½ tablespoon ginger 1 tablespoon olive oil 1 lime, juiced 100 mL (⅓ cup) apple cider vinegar salt, to taste, we used 1 tablespoon pepper, to taste, we used 2 tablespoons Preparation : Prepare the chicken by removing the backbone using a pair of kitchen scissors or a sharp knife. Cover and marinate in the fridge for at least 3 hours or overnight. Bake in the center of a preheated oven, uncovered for 45-50 minutes at 400°F (200°C), or until the thickest part of the thigh is 320°F (160°C).
